Ingredients
1 watermelon (rind removed, cut into long fry-like shapes)
2 tsp Tajín Classic Seasoning
1 cup coconut yogurt (dairy-free for vegan)
Zest and juice of 1 lime
1 tbsp coconut sugar (or to taste)
Instructions
- Make the Coconut Lime Dip: In a bowl, combine the coconut yogurt, lime zest, lime juice, and coconut sugar. Mix well and set aside.
- Prepare the Watermelon Fries: Cut the watermelon into thick rounds, remove the rind, and then slice into long, fry-like shapes.
- Season the Fries: On a plate, scatter the watermelon fries and sprinkle evenly with Tajín seasoning.
- Serve: Serve the watermelon fries with the coconut lime dip on the side for dipping. Enjoy!
Notes
For added texture, sprinkle some toasted coconut flakes on top of the fries before serving.
Add a pinch of chili powder to the Tajín seasoning for an extra kick.
Mix in a handful of fresh mango puree or pineapple chunks into the coconut lime dip for a tropical twist.
Add some finely chopped fresh mint leaves into the dip for a refreshing herbal note.
