A fresh and vibrant tomato salad made with juicy ripe tomatoes, crisp vegetables, and a simple lemon-olive oil dressing, perfect as a light and refreshing side dish.

Ingredients

4 large ripe tomatoes, sliced

1 small red onion, thinly sliced

1/2 cucumber, sliced

1/2 cup fresh basil leaves

3 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon salt

1/2 teaspoon black pepper

1 clove garlic, minced (optional)

2 tablespoons feta cheese crumbles (optional)

Instructions

  1. Slice the tomatoes, red onion, and cucumber and place them into a large salad bowl.
  2. Add the fresh basil leaves and minced garlic, if using.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  4. Pour the dressing over the salad.
  5. Gently toss until all ingredients are evenly coated.
  6. Sprinkle feta cheese on top if desired.
  7. Let the salad rest for a few minutes, then serve.

Notes

Add the dressing just before serving to prevent excess moisture.

Cherry tomatoes can be used instead of large tomatoes.

Avocado, olives, or fresh herbs make great additions.

Best enjoyed fresh on the same day.

Adjust lemon juice to taste for more or less acidity.
