Ingredients
1 large pizza crust of choice (such as organic frozen gluten-free)
3 small sweet onions, thinly sliced
2 tablespoons extra virgin olive oil
1 tablespoon coconut sugar
1 cup fresh mozzarella, sliced or shredded
3/4 cup shredded Gruyere cheese
Fresh thyme for garnish
Red pepper flakes (optional)
Instructions
- In a large skillet, warm the olive oil over medium-high heat. Add the thinly sliced onions and cook for about 3 minutes, stirring occasionally.
- Cover the skillet and simmer the onions for about 10 minutes, stirring occasionally to ensure they cook evenly.
- Stir in the coconut sugar and cook for an additional 2 minutes, until the onions are caramelized and golden brown.
- Preheat the oven to 425°F. Drizzle a bit of oil over the pizza crust to prepare it for the toppings.
- Spread the shredded mozzarella cheese evenly over the crust. Then, add the caramelized onions, followed by the Gruyere cheese and a sprinkle of fresh thyme.
- Place the pizza in the oven and bake for about 10 minutes, until the crust is golden and the cheese is melted. Broil for 1–2 minutes for a bubbly, crispy finish.
- Slice the pizza and enjoy while it’s still warm!
Notes
You can add cooked chicken or sausage on top of the pizza for extra protein.
Use a gluten-free pizza crust if needed.
Substitute Gruyere with Swiss cheese or cheddar for different flavors.
Experiment with herbs like rosemary or oregano to customize the taste.
