Ingredients

1 ½ cups light brown sugar

1 cup soy sauce

½ cup pineapple juice (optional)

½ cup water

¼ cup vegetable oil

3 large garlic cloves, chopped

4 pounds boneless round steak, cut into ¼-inch slices

Bamboo skewers, soaked in water

Instructions

  1. In a large bowl, whisk together light brown sugar, soy sauce, pineapple juice (if using), water, vegetable oil, and chopped garlic.
  2. Add the beef slices to the marinade and stir to coat evenly.
  3. Cover the bowl and refrigerate for 24 hours to marinate.
  4. After marinating, remove the beef from the marinade, shaking off any excess liquid. Discard the marinade.
  5. Thread the beef slices onto the soaked bamboo skewers in a zig-zag pattern.
  6. Preheat the grill to medium heat and lightly oil the grate.
  7. Grill the skewers for about 3 minutes per side, or until the beef is cooked through and slightly caramelized.
  8. Remove from the grill and serve immediately.

Notes

For a spicy twist, add red pepper flakes or chili paste to the marinade.

You can use chicken, pork, or shrimp in place of beef.

For a vegetarian version, swap beef for tofu or tempeh.

Add chopped pineapple or mango to the skewers for a tropical burst of flavor.
