Ingredients

  • Cinnamon Roll Dough
  • 3/4 cup whole milk, heated to 110°F
  • 1 (1/4-oz) packet active dry yeast (2 1/4 tsp)
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 2 3/4 cups (330 g) all-purpose flour
  • 3 Tbsp unsalted butter, room temperature
  • 1/2 tsp kosher salt
  • Cooking spray
  • Filling
  • 1 cup (215 g) packed dark brown sugar
  • 6 Tbsp unsalted butter, melted
  • 1 Tbsp ground cinnamon
  • 1 tsp ground allspice
  • 1/2 tsp kosher salt
  • All-purpose flour, for dusting
  • 2 Honeycrisp or Granny Smith apples, peeled, cored, finely chopped
  • Cooking spray
  • Streusel
  • 2/3 cup (80 g) all-purpose flour
  • 1/4 cup (55 g) packed dark brown sugar
  • 3 Tbsp granulated sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 3 Tbsp unsalted butter, melted
  • Glaze
  • 1 cup (115 g) confectioners’ sugar
  • 6 oz cream cheese, softened
  • 1/4 cup whole milk
  • 2 tsp unsalted butter
  • 1 tsp pure vanilla extract

Instructions

  1. In a stand mixer bowl, combine warm milk, yeast, and granulated sugar. Stir gently and let sit for 10 minutes until foamy.
  2. Add egg, flour, butter, and salt. Mix on low until combined, then knead on medium-high until smooth and pulling away from the bowl. Transfer dough to a greased bowl, cover, and let rise for 1 hour.
  3. Make the filling by stirring together brown sugar, melted butter, cinnamon, allspice, and salt.
  4. Once dough has doubled, punch it down and divide into 3 equal pieces. Roll each into a 15×8.5-inch rectangle. Spread with filling and sprinkle apples evenly on top. Roll each rectangle into a log and slice each log into 12 pieces.
  5. Lightly grease a sheet pan and arrange all 36 rolls on it. Cover and let rise 30 minutes.
  6. Make streusel: mix flour, brown sugar, granulated sugar, cinnamon, and salt. Add melted butter and mix until crumbly.
  7. Preheat oven to 375°F. Sprinkle streusel over the risen rolls and bake 25–30 minutes until golden and set.
  8. Make glaze: beat confectioners’ sugar, cream cheese, milk, butter, and vanilla until smooth. Drizzle over warm rolls.

Notes

  • Add chopped pecans, walnuts, raisins, or dried cranberries to the filling for added flavor and texture.
  • Swap apples for pears or pumpkin spice for the allspice for a seasonal twist.
  • Drizzle with warm caramel before glazing for extra indulgence.
