A hearty one-pan dish of roasted Italian sausage, bell peppers, and onions tossed in a garlicky, tangy seasoning mix and finished with fresh basil.

Ingredients

3 Tbsp extra-virgin olive oil

1 Tbsp red wine vinegar

2 cloves garlic, minced

2 tsp dried oregano

1 tsp crushed red pepper

3 bell peppers, sliced

1 large yellow onion, sliced

Kosher salt

Freshly ground black pepper

6 sweet or hot Italian sausages, sliced into quarters

1/4 cup freshly sliced basil

Instructions

  1. Preheat oven to 400°F. In a large bowl, whisk together olive oil, red wine vinegar, garlic, oregano, and crushed red pepper. Add peppers and onions and toss to coat. Transfer to a 9×13-inch pan and scatter sausage pieces on top.
  2. Bake for 40–45 minutes, until vegetables are tender and sausage is cooked through.
  3. Top with fresh basil and serve hot.

Notes

Use a mix of colorful peppers for extra sweetness.

Add mushrooms for extra richness.

Stir in marinara during the last 10 minutes for a saucier dish.
