Ingredients

10 slices English cucumber (thin ribbons made with a peeler)

3 slices smoked salmon

1 tablespoon cream cheese or Boursin

Instructions

  1. Peel the top of the cucumber until smooth, then use a Y-peeler to create long, thin strips.
  2. Arrange the strips on a paper towel, slightly overlapping, to absorb moisture.
  3. Pat dry with another paper towel.
  4. Spread a thin layer of Boursin or cream cheese over the cucumber strips.
  5. Lay the smoked salmon slices across the cheese-coated strips.
  6. Roll tightly and slice into bite-size pieces; use toothpicks if needed to secure.
  7. Serve immediately.

Notes

Use tzatziki, spicy mayo, hummus, or ranch instead of cream cheese for flavor variations.

Add avocado slices, herbs, or sesame seeds for extra texture.
