Instructions
- Peel the top of the cucumber until smooth, then use a Y-peeler to create long, thin strips.
- Arrange the strips on a paper towel, slightly overlapping, to absorb moisture.
- Pat dry with another paper towel.
- Spread a thin layer of Boursin or cream cheese over the cucumber strips.
- Lay the smoked salmon slices across the cheese-coated strips.
- Roll tightly and slice into bite-size pieces; use toothpicks if needed to secure.
- Serve immediately.
Notes
Use tzatziki, spicy mayo, hummus, or ranch instead of cream cheese for flavor variations.
Add avocado slices, herbs, or sesame seeds for extra texture.
