A quick and comforting Rotel Dip made with ground beef, Velveeta cheese, and Rotel tomatoes that’s creamy, savory, and perfect for parties or game day.

Ingredients

1 pound ground beef

1 (10 ounce) can Rotel tomatoes, undrained

16 ounces Velveeta cheese, cubed

1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Heat a large skillet over medium heat and cook the ground beef, breaking it apart as it browns.
  2. Once fully cooked, drain off any excess grease.
  3. Add the undrained Rotel tomatoes and cubed Velveeta cheese to the skillet.
  4. Stir and cook, stirring occasionally, until the cheese is completely melted and the dip is smooth.
  5. Stir in red pepper flakes if using.
  6. Serve warm immediately.

Notes

Use mild or hot Rotel tomatoes to control the spice level.

Ground turkey or sausage can be used instead of beef.

For a thicker dip, reduce heat and stir frequently.

Add a splash of milk when reheating if the dip thickens.
