- For the Chicken Rolls:
 - 4 boneless, skinless chicken breasts
 - 1 cup fresh spinach, chopped
 - ½ cup sun-dried tomatoes, chopped (packed in oil, drained)
 - ½ cup crumbled feta cheese

 - ½ teaspoon onion powder
 - ½ teaspoon dried oregano
 - Salt and pepper, to taste
 - Toothpicks or kitchen twine (for securing)
 - Fresh basil or parsley, for garnish
 
Instructions
- Prepare the Chicken: Preheat the oven to 375°F (190°C). Lightly grease a baking dish or line with parchment. Flatten chicken breasts between parchment or plastic wrap to about ½ inch thick.
 - Make the Filling: In a small bowl, combine chopped spinach, sun-dried tomatoes, crumbled feta, and mozzarella (if using).
 - Assemble the Rolls: Season chicken with garlic powder, onion powder, oregano, salt, and pepper. Spoon the filling onto each breast, roll tightly, and secure with toothpicks or kitchen twine.
 - Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Sear the rolls for 2–3 minutes per side until golden brown.
 - Bake: Transfer the seared rolls to the prepared baking dish and bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
 - Serve: Let rest for 5 minutes before slicing. Garnish with fresh basil or parsley and serve warm.

- Swap spinach with kale or arugula for a variation.
 - Add artichokes or roasted red peppers for more Mediterranean flavor.
 - Mix in cream cheese for an extra creamy filling.
 - To grill instead of bake, cook over medium heat for about 15 minutes, turning occasionally.
