Instructions

  1. Prepare the Chicken: Preheat the oven to 375°F (190°C). Lightly grease a baking dish or line with parchment. Flatten chicken breasts between parchment or plastic wrap to about ½ inch thick.
  2. Make the Filling: In a small bowl, combine chopped spinach, sun-dried tomatoes, crumbled feta, and mozzarella (if using).
  3. Assemble the Rolls: Season chicken with garlic powder, onion powder, oregano, salt, and pepper. Spoon the filling onto each breast, roll tightly, and secure with toothpicks or kitchen twine.
