A quick, creamy Ro-Tel dip made with melty Velveeta, tomatoes with chiles, and seasoned meat. Perfect for parties, game days, and easy entertaining with tortilla chips.

Ingredients

1 lb ground beef or sausage

1 can Ro-Tel tomatoes

1 package Velveeta cheese, cubed

1/2 tsp chili powder

Chopped fresh cilantro, for serving

Tortilla chips, for serving

Instructions

  1. Heat a large skillet over medium-high heat. Cook the ground beef or sausage until browned, about 5 minutes. Drain excess fat.
  2. Reduce heat to medium and add Ro-Tel tomatoes and cubed Velveeta.
  3. Cook, stirring often, until the cheese is fully melted and the dip is smooth, about 5 minutes.
  4. Remove from heat and stir in chili powder.
  5. Serve warm, topped with cilantro, with tortilla chips on the side.

Notes

Add taco seasoning or Cajun seasoning for extra flavor.

Stir in diced jalapeño for more heat.

Add black beans or corn for a heartier dip.

Top with pico de gallo or more cilantro for brightness.

Serve over fries, baked potatoes, or nachos for a full meal.
