This Quick Strawberry Shortcake is the ultimate easy dessert, combining sweetened strawberries, whipped cream, and store-bought shortcake cups for a delicious, no-fuss treat. Perfect for summer gatherings, potlucks, or a weeknight dessert, this recipe is quick, simple, and sure to impress!

  • Total Time: 5 servings

Ingredients

For the Filling:

2 pints ripe strawberries, hulled and chopped

2 tablespoons white sugar

1 cup sweetened condensed milk

For the Topping:

5 prepared strawberry shortcake cups

1 cup heavy cream, whipped

Instructions

  1. Prepare the Strawberries:
In a bowl, combine chopped strawberries, white sugar, and sweetened condensed milk. Mash with a fork until the mixture is juicy and syrupy. Let it sit covered in the fridge for 30 to 60 minutes to allow the flavors to meld.

  2. Assemble the Shortcakes:
Once the strawberry mixture has chilled, place each shortcake cup on a dessert plate. Spoon the strawberry mixture over the top, making sure to get a generous amount of fruit and syrup.

  3. Top with Whipped Cream:
Finish by topping each shortcake with a dollop of freshly whipped cream. Serve immediately.

Notes

Sugar Options: Brown sugar or coconut sugar can be used instead of white sugar for a deeper flavor.

Make-Ahead Tip: You can prepare the strawberry mixture and whipped cream ahead of time, but assemble the shortcakes just before serving to keep the shortcakes from becoming soggy.

Whipped Cream Flavor: Add a splash of vanilla extract or a pinch of cinnamon to the whipped cream for extra flavor.
