Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Using a mandolin or sharp knife, slice the onions very thinly.
- Spread shredded Parmesan cheese evenly across the prepared baking sheet to create a base layer.
- Arrange onion slices in a single layer over the cheese, avoiding overlap.
- Brush the onions lightly with olive oil.
- Sprinkle with sea salt, garlic powder, smoked paprika, and black pepper.
- Bake for 18–20 minutes, until the cheese is golden and crispy.
- Let cool for a few minutes, then break into pieces or cut into chip-sized portions before serving.
Notes
Use mozzarella or cheddar instead of Parmesan for a different flavor profile.
Add cayenne or chili flakes for a spicy kick.
Double the smoked paprika for a deeper smoky taste.
Serve with ranch dressing or garlic aioli for dipping.
Re-crisp in a 350°F (175°C) oven for 3–4 minutes if they soften.
