Lazy Enchiladas are a quick and easy dinner made with frozen beef & cheese taquitos, enchilada sauce, green chiles, and melted cheese. It’s a flavorful and comforting meal that’s ready in under 30 minutes!

Ingredients

22.5 ounces box of frozen beef & cheese taquitos

10 ounces can of enchilada sauce

4 ounces can of mild diced green chiles

8 ounces block of Colby Jack cheese, shredded

1 tablespoon fresh cilantro, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the frozen taquitos in a single layer in a 9×13-inch baking dish.
  3. Pour the enchilada sauce evenly over the taquitos, ensuring they are well-coated.
  4. Sprinkle the diced green chiles over the top for extra flavor.
  5. Top with the shredded Colby Jack cheese, making sure it covers the entire dish.
  6. Bake for 20-25 minutes or until the cheese is melted and bubbly, and the taquitos are heated through.
  7. Remove from the oven and garnish with fresh cilantro. Serve and enjoy!
