Ingredients
1 pound ground breakfast sausage
6 large eggs
1 cup heavy cream
2 cups fresh spinach, chopped
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
¼ cup diced onion
½ teaspoon garlic powder
Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.

In a large skillet over medium heat, cook the ground sausage and diced onion until browned and cooked through. Drain any excess fat.

Add the chopped spinach to the skillet and cook for 1-2 minutes until wilted. Remove from heat.

In a large bowl, whisk together eggs, heavy cream, garlic powder, salt, and pepper.

Spread the sausage, onion, and spinach mixture evenly in the prepared baking dish. Sprinkle the cheddar and mozzarella cheese on top.

Pour the egg mixture over the ingredients in the baking dish. Bake for 30-35 minutes, or until the casserole is set and golden. Let it cool slightly before serving.
Notes
Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheating: Reheat in the microwave or bake in the oven at 350°F (175°C) for 10-15 minutes until heated through.
Freezing: You can freeze the casserole before or after baking. If freezing before baking, cover tightly with foil and freeze for up to 3 months. Thaw in the refrigerator overnight and bake as directed. If freezing after baking, let it cool completely before wrapping and freezing.
