This Keto Sausage Spinach Breakfast Casserole is a savory, low-carb breakfast packed with ground sausage, fresh spinach, eggs, and cheese. Ingredients

1 pound ground breakfast sausage

6 large eggs

1 cup heavy cream

2 cups fresh spinach, chopped

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

¼ cup diced onion

½ teaspoon garlic powder

Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  • In a large skillet over medium heat, cook the ground sausage and diced onion until browned and cooked through. Drain any excess fat.

  • Add the chopped spinach to the skillet and cook for 1-2 minutes until wilted. Remove from heat.

  • In a large bowl, whisk together eggs, heavy cream, garlic powder, salt, and pepper.

  • Spread the sausage, onion, and spinach mixture evenly in the prepared baking dish. Sprinkle the cheddar and mozzarella cheese on top.

  • Pour the egg mixture over the ingredients in the baking dish. Bake for 30-35 minutes, or until the casserole is set and golden. Let it cool slightly before serving.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheating: Reheat in the microwave or bake in the oven at 350°F (175°C) for 10-15 minutes until heated through.

Freezing: You can freeze the casserole before or after baking. If freezing before baking, cover tightly with foil and freeze for up to 3 months. Thaw in the refrigerator overnight and bake as directed. If freezing after baking, let it cool completely before wrapping and freezing.
