Homemade Herb Crusted Italian Bread is soft, fluffy on the inside, with a golden, crunchy herb-infused crust. It’s perfect for sandwiches, dipping, or as a side to any meal. Made with simple ingredients and aromatic herbs, this bread brings the taste of Italy straight to your table.

Ingredients

0.25 ounces active dry yeast

1 teaspoon granulated sugar

1 cup warm water

2 cups bread flour

2 tablespoons olive oil

1 teaspoon salt

¼ cup dry Italian herbs

1 teaspoon garlic powder

Instructions

  1. In the bowl of your stand mixer, combine the yeast, sugar, and warm water. Let it stand for 5 minutes to activate the yeast.
  2. After 5 minutes, add the bread flour, olive oil, and salt to the yeast mixture. Beat on low speed for 1 minute using the dough hook.
  3. Gradually add up to 1 additional cup of flour until the dough pulls away from the sides and becomes smooth. Avoid adding too much flour.
  4. Increase the mixer speed to medium and knead the dough for 5 minutes.
  5. Cover the bowl with a towel or plastic wrap and let the dough rise in a warm place for 30 minutes, or until it doubles in size.
  6. After 30 minutes, punch down the dough and let it rest for 10 minutes.
  7. On a lightly floured surface, shape the dough into a loaf and place it into a greased loaf pan. Make a ¼-inch deep slit lengthwise across the top of the dough.
  8. In a small bowl, mix the dry Italian herbs and garlic powder. Brush the top of the dough with olive oil, then sprinkle the herb mixture on top, pressing gently into the dough.
  9. Preheat the oven to 475°F (190°C) and bake for 12-14 minutes or until golden brown.
  10. Remove from the oven and let the bread sit for 5 minutes. Turn it out onto a wire rack and allow it to cool completely before serving or storing.

Notes

For a garlic lover’s bread, add extra garlic powder or minced garlic to the dough.

For a cheesy crust, sprinkle Parmesan or mozzarella cheese on top before baking.

Feel free to experiment with other herbs like rosemary, thyme, or oregano.

Store at room temperature for up to 2 days or freeze for up to 3 months.

If making ahead, let the dough rise in the fridge overnight for a slower fermentation.
