Simple and kid-approved herb roasted baby carrots that are naturally sweet, lightly caramelized, and seasoned with pantry herbs for a fast and healthy side dish.

Ingredients

1 lb baby carrots

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the baby carrots and pat them dry thoroughly.
  3. In a large bowl, toss the carrots with olive oil, thyme, rosemary, garlic powder, salt, and black pepper until evenly coated.
  4. Spread the carrots in a single layer on a baking sheet.
  5. Roast for 20–25 minutes, stirring halfway through, until tender and lightly caramelized.
  6. Serve warm straight from the oven.

Notes

Fresh herbs can be substituted for dried herbs.

A drizzle of honey adds mild sweetness.

Add paprika for extra warmth.
