Ingredients
1 lb baby carrots
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the baby carrots and pat them dry thoroughly.
- In a large bowl, toss the carrots with olive oil, thyme, rosemary, garlic powder, salt, and black pepper until evenly coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 20–25 minutes, stirring halfway through, until tender and lightly caramelized.
- Serve warm straight from the oven.
Notes
Fresh herbs can be substituted for dried herbs.
A drizzle of honey adds mild sweetness.
Add paprika for extra warmth.
Carrots reheat well for meal prep.
