It features a homemade biscuit base topped with tangy condiments, seasoned ground beef, melted cheese, and is finished with fresh lettuce, dill pickles, and a creamy drizzle.

Ingredients

1 lb ground beef or sausage

2 cups flour

1 tbsp baking powder

1 tsp dried Italian herbs

1 tsp salt

1/4 cup olive oil

1/2 cup buttermilk (or 1/2 cup milk + 1/2 tbsp vinegar)

1/2 cup ketchup

1/4 cup mustard

1 1/2 cups shredded cheddar cheese

2 cups shredded lettuce

1/2 cup chopped dill pickle

1/3 cup mayonnaise

23 tbsp dill pickle juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the ground beef or sausage until browned and fully cooked. Set aside.
  3. In a large mixing bowl, whisk together flour, baking powder, Italian herbs, and salt.
  4. Add olive oil and buttermilk (or milk/vinegar) to the flour mixture. Stir until a soft, slightly sticky biscuit dough forms. Adjust with extra milk or flour if needed.
  5. Press the biscuit dough evenly into a greased 9×13-inch baking dish.
  6. In a small bowl, mix ketchup and mustard, then spread over the biscuit dough.
  7. Layer the cooked ground meat evenly over the condiments.
  8. Sprinkle the shredded cheddar cheese evenly over the meat layer.
  9. Bake for about 15 minutes, or until the biscuit base is golden brown and cheese is melted.
  10. In another small bowl, mix mayonnaise and pickle juice to create a tangy drizzle.
  11. Once baked, remove the casserole from the oven and top with shredded lettuce and chopped pickles.
  12. Drizzle the mayo mixture over the top. Cut into squares and serve warm.
