Ingredients
1 lb ground beef or sausage
2 cups flour
1 tbsp baking powder
1 tsp dried Italian herbs
1 tsp salt
1/4 cup olive oil
1/2 cup buttermilk (or 1/2 cup milk + 1/2 tbsp vinegar)
1/2 cup ketchup
1/4 cup mustard
1 1/2 cups shredded cheddar cheese
2 cups shredded lettuce
1/2 cup chopped dill pickle
1/3 cup mayonnaise
2–3 tbsp dill pickle juice
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet over medium heat, cook the ground beef or sausage until browned and fully cooked. Set aside.
- In a large mixing bowl, whisk together flour, baking powder, Italian herbs, and salt.
- Add olive oil and buttermilk (or milk/vinegar) to the flour mixture. Stir until a soft, slightly sticky biscuit dough forms. Adjust with extra milk or flour if needed.
- Press the biscuit dough evenly into a greased 9×13-inch baking dish.
- In a small bowl, mix ketchup and mustard, then spread over the biscuit dough.
- Layer the cooked ground meat evenly over the condiments.
- Sprinkle the shredded cheddar cheese evenly over the meat layer.
- Bake for about 15 minutes, or until the biscuit base is golden brown and cheese is melted.
- In another small bowl, mix mayonnaise and pickle juice to create a tangy drizzle.
- Once baked, remove the casserole from the oven and top with shredded lettuce and chopped pickles.
- Drizzle the mayo mixture over the top. Cut into squares and serve warm.
Notes
Use ground turkey or plant-based meat as an alternative to beef.
Add chopped jalapeños or hot sauce for a spicy version.
Experiment with different cheeses like pepper jack or mozzarella.
Add sautéed onions, mushrooms, or tomatoes before baking for extra veggies.
Use store-bought biscuit dough for convenience.
Store leftovers in the fridge for up to 3 days. Reheat in the oven or microwave.
