Ingredients

1 crusty baguette, sliced into 1-inch pieces

2 ripe peaches, halved and pitted

8 oz high-quality burrata cheese

2 tbsp balsamic glaze

Fresh basil leaves, for garnish

2 tbsp extra virgin olive oil

Salt and pepper, to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush both sides of baguette slices with olive oil.
  3. Grill peach halves cut-side down for 3–4 minutes, until caramelized.
  4. Grill baguette slices for 2–3 minutes per side, until crisp and golden.
  5. Spread burrata cheese generously on each grilled baguette slice.
  6. Top with slices of grilled peach, then drizzle with balsamic glaze.
  7. Finish with fresh basil leaves and a light sprinkle of salt and pepper.
  8. Serve immediately while warm.

Notes

Swap peaches for nectarines or figs depending on the season.
