Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Prepare the Wet Ingredients: In a separate bowl, combine the milk, melted butter, eggs, and vanilla extract.
- Combine the Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix to keep the muffins light and fluffy.
- Fold in the Cereal: Gently fold in the Fruity Pebbles cereal. Be sure to keep the cereal intact, folding it in carefully.
- Fill the Muffin Cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle extra Fruity Pebbles on top of each muffin for a colorful finish.
- Bake: Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the muffins to cool for 5 minutes in the pan before transferring them to a wire rack to cool completely.
