2 large apples (Granny Smith or Honeycrisp work well)
1 cup plain Greek yogurt
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 cup granola (your choice)
1/4 cup chopped nuts (walnuts or pecans)
Pinch of salt
Optional: Additional cinnamon for dusting
Instructions
- Wash and core the apples. Slice them into thin wedges, about 8 wedges per apple.
- In a bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Mix well until smooth.
- Dip each apple wedge into the yogurt mixture, ensuring it’s well-coated.
- In a shallow dish, mix together granola and chopped nuts. Roll each yogurt-coated apple wedge into the granola mixture for added texture.
- Place the apple wedges on a parchment-lined baking sheet, spaced out in a single layer.
- Freeze the apple wedges for 2-3 hours until completely solid.
- Once frozen, remove from the freezer. Optionally, sprinkle more cinnamon on top before serving. Enjoy your refreshing snack!
Notes
For extra crunch, try adding toasted pine nuts or sesame seeds to the granola mix.
Experiment with different fruit varieties like pears or peaches for a twist.
For a sweeter version, drizzle melted chocolate over the frozen apple sticks.
