Light, airy cheese and herb popovers with crisp edges and soft centers, made from a simple batter that puffs beautifully in the oven for an effortless yet impressive side or breakfast treat.

Ingredients

1 cup all-purpose flour

½ teaspoon salt

¼ teaspoon black pepper

1 cup milk

2 large eggs

1 tablespoon melted butter

½ cup shredded cheddar cheese

1 tablespoon chopped fresh herbs (parsley, chives, or thyme)

Instructions

  1. Preheat oven to 450°F and generously grease a popover pan or muffin tin.
  2. In a bowl, whisk together flour, salt, and black pepper.
  3. In another bowl, mix milk, eggs, and melted butter until smooth.
  4. Pour wet ingredients into dry ingredients and stir just until blended.
  5. Gently fold in shredded cheese and chopped herbs.
  6. Fill each cup about two-thirds full with batter.
  7. Bake for 20 minutes, then reduce oven temperature to 350°F.
  8. Continue baking for another 15 minutes until puffed and golden.
  9. Remove from oven and serve immediately while warm.

Notes

Do not open the oven while baking to prevent collapse.

Whole milk produces the best rise, but lower-fat milk works.

Popovers are best enjoyed fresh from the oven.

Muffin tins can be used if a popover pan isn’t available.
