This Easy Hummus Chicken & Chopped Salad features tender chicken breasts topped with creamy hummus and served alongside a refreshing chopped salad. Healthy, flavorful, and simple to make, it’s perfect for a quick weeknight dinner or meal prep.

Ingredients

For the Easy Hummus Chicken:

2 pounds chicken breast

1 cup hummus

Cooking spray or avocado oil spray

Salt and pepper, to taste

For the Easy Chopped Salad:

1 English cucumber

3 cups cherry or grape tomatoes, halved

¼ cup feta crumbles

2 tbsp extra virgin olive oil

2 tbsp lemon juice

1 tsp sumac (optional)

Garlic salt, to taste

Pepper, to taste

Instructions

  • Prepare the Hummus Chicken:
    Preheat your oven to 400°F (200°C). Grease a casserole dish or foil-lined sheet pan with cooking spray or a bit of oil. Place chicken breasts in the dish and season both sides with salt and pepper.

  • Bake the Chicken:
    Bake the chicken for 5 minutes, then remove from the oven. Top each breast with ¼ cup of hummus, spreading it evenly. Return the chicken to the oven and bake for an additional 15-25 minutes, or until the internal temperature reaches 165°F (74°C).

  • Make the Chopped Salad:
    While the chicken bakes, slice the cucumber into half-moons and halve the tomatoes. Combine the cucumber, tomatoes, feta, olive oil, lemon juice, sumac (if using), garlic salt, and pepper in a large bowl. Toss well.

  • Serve:
    Once the chicken is cooked, remove from the oven. Serve the chicken alongside the fresh chopped salad.

Notes

Hummus: You can use any flavor of hummus you prefer—traditional, roasted red pepper, or garlic hummus all work well.

Sumac: Sumac adds a nice tangy flavor to the salad, but it’s optional. If you can’t find sumac, lemon zest is a great substitute.

Cooking Time for Chicken: Depending on the thickness of your chicken breasts, the baking time may vary. Always check the internal temperature to ensure it’s fully cooked.
