The Cucumber Ginger Lime Refresher is a revitalizing and hydrating mocktail, blending crisp cucumber, zesty lime, and a touch of spicy ginger. It’s the perfect drink for hot summer days, casual gatherings, or whenever you need a refreshing boost.

Ingredients

2 cucumbers, skins removed

4 cups water

1015 sprigs fresh mint (plus more for garnish)

3-inch slice fresh ginger

2 tbsp honey

2 limes, juiced

Splash of club soda (for each glass)

Ice (for each glass)

Instructions

  1. Peel the cucumbers using a vegetable peeler. Optionally, reserve some skin pieces for garnish.
  2. Blend the cucumber, ginger, mint, lime juice, and honey with water until smooth.
  3. Strain the blended mixture using a fine strainer, or pour it into a cocktail shaker with a strainer top for a smoother consistency.
  4. Fill each glass with ice.
  5. Strain the drink into each glass, then top with a splash of club soda for a light, fizzy effect.
  6. Garnish with fresh mint and cucumber slices. Serve chilled and enjoy!

Notes

Adjust the honey amount for a sweeter or less sweet drink.

For a spicy kick, add cayenne pepper or hot sauce.

For an alcoholic version, add gin or vodka.
