Ingredients
2 cucumbers, skins removed
4 cups water
10–15 sprigs fresh mint (plus more for garnish)
3-inch slice fresh ginger
2 tbsp honey
2 limes, juiced
Splash of club soda (for each glass)
Ice (for each glass)
Instructions
- Peel the cucumbers using a vegetable peeler. Optionally, reserve some skin pieces for garnish.
- Blend the cucumber, ginger, mint, lime juice, and honey with water until smooth.
- Strain the blended mixture using a fine strainer, or pour it into a cocktail shaker with a strainer top for a smoother consistency.
- Fill each glass with ice.
- Strain the drink into each glass, then top with a splash of club soda for a light, fizzy effect.
- Garnish with fresh mint and cucumber slices. Serve chilled and enjoy!
Notes
Adjust the honey amount for a sweeter or less sweet drink.
For a spicy kick, add cayenne pepper or hot sauce.
For an alcoholic version, add gin or vodka.
For extra bubbles, add more club soda or sparkling water.
Swap mint for basil or thyme for a different flavor profile.
