1 cup plain Greek yogurt (or yogurt of choice)
1/2 cup canned pumpkin puree (not pumpkin pie filling)
1 tbsp maple syrup or honey
1/2 tsp pumpkin pie spice
1/4 tsp vanilla extract
1/4 cup granola (for topping)
1 tbsp chopped nuts such as pecans or walnuts (for topping)
Fresh fruit such as banana or apple slices (optional topping)
Instructions
- In a bowl, combine the yogurt, pumpkin puree, maple syrup or honey, pumpkin pie spice, and vanilla extract.
- Stir until smooth and fully blended.
- Spoon the mixture into a serving bowl.
- Top with granola, chopped nuts, and fresh fruit if desired.
- Serve immediately.
Notes
Use plain pumpkin puree, not pumpkin pie filling.
Adjust sweetness to taste.
Add toppings just before serving for best texture.
Great served chilled.
