4 skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
½ cup seasoned bread crumbs
Instructions
-
Preheat your oven to 350°F (175°C). Coat a 7×11-inch baking dish with nonstick cooking spray.
-
Pound each chicken breast to about ¼-inch thickness.
-
Sprinkle both sides of the chicken breasts with salt and pepper.
-
Place 1 slice of Swiss cheese on top of each chicken breast.
-
Roll up each breast tightly and secure with toothpicks.
-
Place the rolled-up chicken in the prepared baking dish and evenly sprinkle with bread crumbs.
-
Bake in the preheated oven for 30-35 minutes, or until the chicken is no longer pink inside.
-
Remove the dish from the oven and place ½ slice of Swiss cheese on top of each chicken roll.
-
Return the dish to the oven for 3-5 minutes, until the cheese has melted.
-
Remove the toothpicks and serve immediately.
Notes
Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days.
Reheating: To reheat, place the chicken in the oven at 350°F (175°C) for about 10 minutes, or until heated through.
Freezing: You can freeze the assembled, uncooked chicken rolls. After rolling and before baking, freeze for up to 4 months. Thaw in the refrigerator overnight and bake as usual.
