4 low-carb tortillas
½ cup marinara sauce (plus extra for dipping)
½ cup pepperoni slices
1 cup shredded mozzarella cheese
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare Tortillas: Lay tortillas flat on a clean surface. Warm them in the microwave for 10–15 seconds if needed to make them pliable.
- Add Filling: Spread a thin layer of marinara sauce on each tortilla, leaving about an inch around the edges. Layer with pepperoni slices and sprinkle with mozzarella cheese.
- Roll Up: Roll each tortilla tightly into a log, keeping the filling tucked inside.
- Slice: Cut the rolled tortillas into 1-inch sections and place them seam-side down on the baking sheet.
- Bake: Bake for 12–15 minutes, or until golden brown and the cheese is melted. For extra crispiness, bake 2–3 minutes longer.
- Serve: Cool slightly and serve warm with marinara sauce for dipping.
Notes
Add diced bell peppers, mushrooms, or olives for extra flavor.
For a spicy kick, sprinkle crushed red pepper flakes inside the roll-ups.
Use provolone or cheddar for a different cheese flavor.
To make vegetarian, omit pepperoni and use your favorite veggies.
