Ingredients

1 medium steak (about 68 oz / 170225 g, such as ribeye, sirloin, or flank)

2 large eggs

1 tablespoon butter or ghee (optional)

Salt and pepper, to taste

Optional Additions:

1 oz shredded cheese

2 slices avocado

A sprinkle of chili flakes or smoked paprika

Instructions

  1. Cook the steak: Season the steak generously with salt and pepper. Heat a skillet over medium-high heat with butter or ghee, then sear the steak for 3–4 minutes per side, or until your preferred doneness is reached. Let the steak rest for 5 minutes, then slice it thinly against the grain.
  2. Make the egg wrap: Whisk the eggs with a pinch of salt and pour into a non-stick skillet over medium heat. Swirl to coat evenly and cook for 1–2 minutes, until the eggs are set. Remove from the skillet and slide the egg sheet onto a plate.
  3. Assemble the wrap: Place the sliced steak in the center of the egg wrap. Add any optional toppings, like shredded cheese or avocado. Roll or fold the egg sheet around the steak.

Notes

You can use any steak cut you prefer. Ribeye, sirloin, and flank steak are great options, but you can experiment with other cuts based on what you have available.

For a dairy-free version, simply skip the cheese or use a non-dairy alternative.
