Ingredients

  • Filling:
  • 4 tablespoons butter
  • 2 lbs honeycrisp apples (about 6), thinly sliced
  • 3/4 cup packed brown sugar
  • 1 teaspoon cinnamon

  • Shortbread Crust:
  • 1/2 lb (2 sticks) butter, softened
  • 1/2 cup packed brown sugar
  • 2 teaspoons cinnamon
  • 1/2 teaspoon kosher salt
  • 2 cups all-purpose flour
  • Streusel Topping:
  • 1 cup all-purpose flour
  • 1/4 cup + 1 tablespoon packed brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 1/4 lb (1 stick) butter, cut into cubes

Instructions

  1. Preheat oven to 375°F (190°C). Grease and line a 9×13-inch baking dish with parchment, leaving overhang.
  2. Filling: Melt butter in a skillet over medium-high heat. Sauté apples for 8 minutes until caramelized. Stir in brown sugar, cinnamon, and salt. Simmer 1 minute, then set aside to cool.
  3. Crust: In a mixer, beat butter, brown sugar, cinnamon, and salt until fluffy (about 3 minutes). Add flour in two parts, mixing until combined. Press dough evenly into prepared dish.
  4. Streusel: Mix flour, brown sugar, cinnamon, and salt. Cut in butter with fingers until coarse crumbs form.
  5. Spread apple filling over crust, including sauce. Sprinkle streusel evenly on top.
  6. Bake 30–35 minutes, until golden brown and set.
  7. Cool 45 minutes at room temperature. Lift out with parchment and slice into 12 bars.

Notes

  • Swap Honeycrisp with Granny Smith for tartness or Fuji for sweetness.
  • Add chopped pecans or walnuts to streusel for crunch.
  • For extra richness, drizzle caramel sauce over apples before topping with streusel.
  • Can be halved in an 8×8-inch pan (reduce bake time slightly).
