Ingredients
2.6 lbs red tomatoes
3 tbsp extra virgin olive oil
Salt, as needed
8 basil leaves
Instructions
- Remove the pedicels from the tomatoes, wash them well, and let them dry.
- Cut the tomatoes in half and remove the pith.
- Squeeze each half to remove the seeds.
- Place the tomatoes in a steel pot and cook over low heat, stirring occasionally, until they dry out and break down.
- Pass the cooked tomatoes through a food mill, then transfer the smooth sauce to a smaller pot.
- Set the pot over high heat, add salt and olive oil, and simmer until the sauce reaches your preferred consistency.
- Turn off the heat and add the basil leaves, either whole or coarsely chopped.
Notes
Add sautéed onion or garlic if tomatoes lack flavor.
Mix in a pinch of sugar if the sauce tastes too acidic.
Add a splash of red wine for a richer flavor.
Stir in crushed red pepper flakes for heat.
Blend the sauce for an extra-smooth texture.
