A simple, traditional Italian tomato sauce made from fresh tomatoes, olive oil, basil, and salt, perfect for both pasta and pizza.

Ingredients

2.6 lbs red tomatoes

3 tbsp extra virgin olive oil

Salt, as needed

8 basil leaves

Instructions

  1. Remove the pedicels from the tomatoes, wash them well, and let them dry.
  2. Cut the tomatoes in half and remove the pith.
  3. Squeeze each half to remove the seeds.
  4. Place the tomatoes in a steel pot and cook over low heat, stirring occasionally, until they dry out and break down.
  5. Pass the cooked tomatoes through a food mill, then transfer the smooth sauce to a smaller pot.
  6. Set the pot over high heat, add salt and olive oil, and simmer until the sauce reaches your preferred consistency.
  7. Turn off the heat and add the basil leaves, either whole or coarsely chopped.

Notes

Add sautéed onion or garlic if tomatoes lack flavor.

Mix in a pinch of sugar if the sauce tastes too acidic.

Add a splash of red wine for a richer flavor.

Stir in crushed red pepper flakes for heat.

Blend the sauce for an extra-smooth texture.
