Ingredients
1 kg chicken drumsticks
2 cups cornflakes, crushed
1/4 cup mayo
1 Tbsp milk
1 tsp ground cumin
1 tsp paprika
1 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
Oil spray
Instructions
- In a large bowl, whisk together the mayo, milk, cumin, paprika, garlic powder, salt, and pepper.
- Add the chicken drumsticks and coat thoroughly. Marinate for 30 minutes.
- Place the crushed cornflakes in a shallow dish. Coat each drumstick in the crumbs, pressing gently to adhere.
- Arrange the drumsticks in the air fryer basket in a single layer and lightly spray with oil.
- Air fry at 180°C for 18–20 minutes, flipping halfway, until golden, crispy, and cooked through (internal temperature 74°C).
- Serve hot with mashed potatoes, gravy, and peas.
Notes
Add chili powder for heat or use smoked paprika for deeper flavor.
Panko or crushed rice cereal can replace cornflakes.
Add dried herbs like oregano or thyme for an aromatic coating.
Reheat in the air fryer at 170°C to keep the coating crisp.
