Ingredients
1 cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
1 cup milk
2 large eggs
1 tablespoon melted butter
½ cup shredded cheddar cheese
1 tablespoon chopped fresh herbs (parsley, chives, or thyme)
Instructions
- Preheat oven to 450°F and generously grease a popover pan or muffin tin.
- In a bowl, whisk together flour, salt, and black pepper.
- In another bowl, mix milk, eggs, and melted butter until smooth.
- Pour wet ingredients into dry ingredients and stir just until blended.
- Gently fold in shredded cheese and chopped herbs.
- Fill each cup about two-thirds full with batter.
- Bake for 20 minutes, then reduce oven temperature to 350°F.

Notes
Do not open the oven while baking to prevent collapse.
Whole milk produces the best rise, but lower-fat milk works.
