Ingredients
For the Roll-Ups:
12 lasagna noodles, cooked and drained
1 pound Italian sausage, cooked and crumbled
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1 large egg, beaten
2 cups marinara sauce
2 tablespoons chopped fresh parsley
1 teaspoon dried basil
½ teaspoon garlic powder
Salt and pepper to taste
Instructions

Preheat the Oven:
Preheat your oven to 375°F (190°C). -
Make the Cheese Mixture:
In a mixing bowl, combine ricotta cheese, ½ cup mozzarella, ½ cup Parmesan, the beaten egg, chopped parsley, dried basil, garlic powder, salt, and pepper. Mix everything together until well combined. -
Prepare the Baking Dish:
Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish. -
Assemble the Roll-Ups:
Lay the cooked lasagna noodles flat on a clean surface. Spread about 2 tablespoons of the cheese mixture onto each noodle and top with 2 tablespoons of cooked sausage. -
Roll and Arrange:
Carefully roll up each noodle and place it seam-side down in the prepared baking dish. Arrange the roll-ups in a single layer. -
Add Sauce and Cheese:
Pour the remaining marinara sauce over the roll-ups. Top with the remaining mozzarella and Parmesan cheese. -
Bake:
Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes, until the cheese is bubbly and golden. -
Serve:
Let the roll-ups cool for a few minutes before serving. Garnish with extra parsley if desired.
Notes
Cheese Tip: Freshly grated Parmesan and mozzarella provide the best texture and flavor.
Sausage Options: For a different flavor, use ground turkey, chicken sausage, or even plant-based sausage.
Customize the Filling: Add sautéed spinach, zucchini, or mushrooms for extra vegetables.
